Best Ever Banana Bread


Here is our much requested recipe for Banana Bread. We use the same recipe for Strawberry Banana Bread (just add fresh strawberries) and Chocolate Chip Banana Bread (add your favorite chocolate chips). This easy recipe can be made in 1 bowl.The easiest way is with a stand mixer, but a hand mixer does the job too. Be sure to use the darkest, ripest bananas you can find.

 

Ingredients

  • 4 very ripe bananas, peeled

  • 1/2 cup (one stick) of salted butter, melted and slightly cooled

  • 1/2 teaspoon baking soda

  • 1/2 cup sugar

  • 1 large egg

  • 1 teaspoon vanilla

  • 1 1/2 cups of flour


How to Make It

  • Preheat oven to 350

  • Spray a 4X9 loaf pan (or similar) with cooking spray and line the bottom of the pan with parchment.

  • In the bowl of a stand mixer fitted with the paddle attachment, mix together the ananas and butter until well blended, a minute or two.

  • Add baking soda, then egg, sugar and vanilla. Mix well.

  • Add flour and mix on low just until incorporated. Scrape down sides with a rubber spatula, then briefly mix gain. Careful not to over mix.

  • Add your favorite mix-in's (about 1/2 cup): nuts, chocolate chips strawberries, blueberries, toffee chips.

  • Bake for 1 hour or until a toothpick or wooden skewer inserted into the center comes out clean.


Slice and serve warm with butter or peanut butter or just like it is! Enjoy!
