Chicken Shawarma Hummus Bowl

We marinate strips of chicken thighs with turmeric, oregano, ginger, cinnamon, paprika, cumin and lemon then sautee the chicken and pile it over brown rice and quinoa with pickled red onions, cabbage, cucumber and fresh mint. Included in the bowl is some creamy hummus for serving.
