Pork Carnitas Tamale Pie

This dish is so good because the carnitas are slow cooked in a tomatillo sauce until fall apart tender... they get so much flavor from the low, slow braise.  We send this ready to assemble with the cornbread base + slow braised carnitas+ cheddar & jack cheese+ cherry tomato pico de gallo & sour cream for topping.  Preheat the oven,grab an oven proof dish, top the cornbread with the carnitas and cheese and heat for about 25 min.  When this goodness comes out of the oven, serve immediately with the sour cream and pico de gallo.  So yum, so comforting!
