Many years ago I was served this beet salad for breakfast with crepes stuffed with shredded beef. I thought it was the oddest thing until I started eating. This salad is crazy good. Roasted and shredded beets tossed with a garlic mayo & chopped roasted walnuts. Crazy good and beets are a superfood!
