Taco Salad Bowl
This is one of my favorite lunches ever and I can't believe I never put it on the menu! I always have it for dinner after 1970's Taco Night! Here we layer black beans and a little rice and top it with grass fed ground beef, cheddar, cherry tomatoes and send it with a little bag of lettuce and tomato vinaigrette for serving. Heat the bowl then top with the lettuce and vinaigrette. I love this one because it is so pure and not full of fake seasonings and salt. The ground beef is sauteed with just a little onion and dash of salt and isn't full of heavy cumin or other flavors. Pure, light and addicting!
Ingredients
Black beans, rice, onion, garlic, tomato, lettuce, grass fed ground beef, cheddar cheee, red wine vinegar, hot sauce, olive oil, canned tomato (for the dressing).
