Vegan Pozole Verde

When I first had pozole I immediately thought that it was the perfect combination of soup and salad in one!  Here we swap the traditional chicken and chicken broth for cannellini beans and veggie stock and add that to a yummy tomatillo broth with hominy, white sweet potato and fresh herbs.  With cabbage, radish and lime for topping.  Crispy GF corn tortillas on the side too.  Dairy Free, Gluten Free
