California Style Pork Chile Verde
There is a little hole-in-the-wall restaurant in Central CA called 'Amigo's' and every time I can find a reason to, I go there for the Pork Chile Verde. This is my effort to copy it! We pan sear pork shoulder then simmer it in a savory tomatillo poblano sauce for hours until it is fall apart tender. On the side we send steamed rice and fresh radish & lime for serving.
Ingredients
Poblano peppers, EVOO, boneless pork shoulder, tomatillos, white onion, jalapeno peppers, garlic, ground cumin, dried oregano, chicken broth, cilantro, lime, diced white onion, minced cilantro, radishes, lime wedges, rice.
