White Wine Coq au Vin
A beautiful Spring version of the slow cooked classic Coq au Vin, Here we use boneless chicken breasts with white wine (instead of the traditional red) with mounds of fresh herbs, mushrooms, carrots and baby onions. On the side we send a fresh herb farro pilaf. Decadent, so satisfying and so healthy.
Ingredients
Garlic, black peppercorns, fresh thyme, dried bay leaf, flat-leaf parsley, skinless boneless chicken breasts, extra-virgin olive oil, pearl onions, white button mushrooms, unsalted butter, kosher salt, freshly ground pepper, cognac, dry white wine, chicken broth, chicken demi glace, tomato paste, cornstarch.
Farro, butter, chicken stock, parsley.
